Brown Butter Gnocchi with Pancetta + Sage

We know many of you are on a healthy kick right now (along with the rest of the country) and we for one are all for making healthier choice in our lives and what we eat. For us we are just trying to take things slow and make lifestyle changes that we can actually do and can become apart of how we live. And let’s not fool anyone here… we still need to have some carbs in our life! Lately¬†we’ve become obsessed with gnocchi and pretty much crave it all the time. Now it’s not the healthiest of meals but it can be pretty healthy and a good alternative to pasta since it’s made from potatoes + eggs and contains a good amount of vitamin A. The other good news is we found a great gnocchi brand that is already pre-made to make things easier at our local Trader Joe’s! Get the recipe for this brown butter gnocchi with pancetta + sage below. Enjoy!

– 1 package of gnocchi, our favorite is Trader Joe’s
– 2 sticks of butter
– 1/2 cup diced pancetta
– 20 fresh sage leaves
– salt + pepper

1. Boil gnocchi in a large pot of salted water, they are done once they float up to the surface
2. Melt butter in a pan + stir until it gets nice + golden brown
3. Fry sage leaves in butter + set aside
4. Cook the pancetta in pan until golden
5. Mix gnocchi, brown butter, sage + pancetta in a large bowl + season with salt + pepper
6. Top with fresh grated parmesan if desired
