Creamy Tomato Soup Shooters

Last week we shared this amazing + easy homemade creamy tomato soup recipe on our monthly news segment on our local KUTV2 News and it’s just so perfect for fall that we had to share with all of our readers! We are serious soup lovers around here and especially a great tomato soup. Sorry no Campbell’s around here for us. This creamy tomato soup recipe is so easy to make and tastes like you spent all day on it. Your little peanuts will love the little drink shooters topped with mini slices of grilled cheese! This is even a great idea for a served appetizer at a family party or event! So cute and so yummy!

 

WHAT YOU NEED:
– 1/4 cup chopped unions
– 1/8 cup {4-5 cloves} garlic chopped
– 10 oz. vegetable stock/broth
– 1 {28 oz.} can crushed tomatoes
– 1 {14.5 oz.} can diced fire roasted tomatoes
– 1 Tbls Extra Virgin Olive Oil
– 1 pint heavy whipped cream
– Salt and pepper to taste

 

DIRECTIONS:
In a blender {we use a magic bullet} blend together onion, garlic and fire roasted tomatoes until smooth. In a large saucepan heat vegetable stock, crushed tomatoes, EVOO, and cream. Mix in blended ingredients and heat until boiling {about 5-10 min}. Add salt and pepper to taste. Serve with grilled cheese!
