Summer Snacks

Today we are featuring a few delicious summer snacks that everyone in the family can enjoy!   Summer has arrived, and  it’s important to have some good (and healthy!) snacks up our sleeve to pack to the pool, and have on hand around the house.   We’re excited to share a tasty muffin, and fruity smoothie recipe, and a delicious peanut butter bar (our personal favorite)!


Here’s what we love about this muffin recipe: practically every ingredient is one we tend to have on hand!


 Blueberry Orange Zest Oat Muffins

:: you will need ::

1 cup all-purpose flour
1 cup rolled oats, plus more for sprinkling
1/2 cup brown sugar, packed
1/2 tsp of cinnamon
1 tsp baking powder
1/2 tsp baking soda
1/2 tsp salt
1/2 cup butter
1 cup blueberry yogurt, or any other yogurt you have on hand
1 large egg, beaten
1/2 tsp vanilla extract
1 cup blueberries
Zest of 1 orange
Sugar for the top

Preheat oven to 400 degrees.  Put dry ingredients in a bowl and set aside.  Gather the rest of the ingredients in a separate bowl, leaving aside the blueberries and orange zest.  Combine the two bowls and stir in blueberries and orange zest.  Optional: sprinkle the tops with sugar and oats.  Scoop into cupcake tins and bake for 13-15 minutes.  This recipe yields 12 muffins.



We love when we have the majority of ingredients on hand when it comes time to bake.  This orange blueberry muffin was no exception, and what a fabulous way to sneak in some super fruits!


Spinach Blueberry Smoothie

:: you will need ::

2 handfuls of spinach

3-4 ice cubes

1 cup milk, or 1 cup almond milk

3/4 frozen berries mix ( ours had raspberries, blueberries, and blackberries)

1 banana

Blend all ingredients together and enjoy!

Peanut Butter Protein Bar

:: you will need ::

1/2 cup peanut butter
1/4 cup brown sugar (or sugar substitute) 
2 tablespoons coconut oil, melted
1 egg
1/2 teaspoon baking soda
2 tablespoons ground flaxseed meal
3/4 cup quick oats
1/2 cup whole wheat flour 
1/4 cup dark chocolate chips (optional)

Preheat oven to 350 degrees.  Mix the first three ingredients together, be sure to soften your coconut oil.  Mix in the egg, baking soda, flaxseed, oats and flour.  Add chocolate chips (if you so desire).  Place on baking sheet – this recipe made about 18 bars.  Cook for 8-10 minutes.  Please note, these don’t set as fast as the regular cookie, give them a minute to cool down.
