Memorial Day BBQ Drinks and Eats

We couldn’t be happier that BBQ season is finally here and we get to celebrate with some of our favorite treats and foods! With Memorial Day Weekend coming up we wanted to share a few quick and easy {and also delicious} food ideas that you can serve to at your BBQ!

 

Fresh pineapple is one of our faves for summer and this sweet fruit goes perfect at a BBQ! Cut out festive shapes of pineapple like stars with a cookie cutter, poke a wooden shish kabob stick through the middle of your pineapple and now you have a simply adorable summertime drink stirrer! We love adding these fruity sticks to our favorite strawberry lemonade! And with the leftover pineapple… throw it on the grill! Yum!

 

 

No BBQ would be complete without some barbecue potato chips! These homemade style chips are perfectly crunch and pack a big taste! They are also really easy to make and are sure to impress!

 

INGREDIENTS:

– 2 tsp. paprika

– 1 tsp. garlic salt

– 1/2 tsp. sugar

– 1/2 tsp. onion powder

– 1/2 tsp. chile powder

– dash of cayenne pepper

– 6-8 potatoes, peeled

– large bowl of ice water

– oil for deep-fat frying

 

 

DIRECTIONS:

 

1. In a small bowl, combine the first seven ingredients; set aside. Using a vegetable peeler, cut potato into very thin slices. Place in a large bowl of ice water. Soak for 30 minutes.

 

2. Drain potatoes, place on paper towels and pat dry. In an electric skillet, heat 1-1/2 in. of oil to 375°. Fry potato slices in batches for 1-2 minutes or until golden brown, turning once. Remove with a slotted spoon or tongs; drain on paper towels. Immediately sprinkle with seasoning mixture. Store in an airtight container.

 

 

And for dessert we can’t think of anything more delicious then mini fruit parfait cups! The red white and blue layers are also perfect for Memorial Day! Using your favorite yogurt {try vanilla greek yogurt} make layers of yogurt, blueberries and top with freshly chopped strawberries for a yummy summer treat!
